Approach

“I don't care about the location or the country – I focus on the project.”

Desert resort, alpine hotel, city roastery: the method stays the same. Understand the property, build the coffee program around it, and train the people who run it every day. Gregorio González, founder

Approach

From idea to opening day.

Discovery

Site visit, guest profile, goals and constraints of the property.

Concept & business case

Positioning, menu and a full financial model: investment, OPEX, staffing, payback.

Design & sourcing

Bar design, equipment, green coffee selection, roasting or capsule partner.

Team & training

Recruitment, barista academy, recipes and service standards.

Opening & quality

Launch on site, then regular audits, menu updates and coaching.

Business case

Real numbers before the first cup.

A coffee bar only works when the numbers do. Every project starts with a transparent financial model – investment, operating cost and staffing, calculated before anything is built. On the business case page a live estimator runs the same logic in your browser: change drinks per day, price, staffing or investment and watch revenue, margin and payback update instantly.

01 · CAPEX

Financial investment

Machines, bar build, roaster or capsules, pre-opening and training.

02 · OPEX

Real operating cost

Cost per drink, maintenance, energy, rent and small wares.

03 · Staff

Real personnel cost

FTE model per opening hour, fully loaded salaries, training and turnover.

Live estimator

Run the numbers for your property – in the browser, in 30 seconds.

Drinks per day, average price, staffing, investment: the model answers with revenue, operating result, margin and payback.

Portfolio

Work in the cup, at the bar, on site.

Every project on this page started in an empty room. A floor plan, a delivery date, a hotel team that had never pulled a shot – and one question: what should coffee feel like here? In the Alps the answer came out warm and slow, built around a fireplace and a seasonal menu. In the desert it had to survive 45 degrees, hard water and guests arriving at four in the morning. In London it had to hold its own in a building where everything else is already perfect.

I like the parts nobody photographs. The week before opening, when the machine is finally in and nothing else is: no cups yet, tape on the floor, a team learning where to put their hands. The morning after the first service, when we taste what actually happened instead of what we planned. The trip to a farm where I spend three days cupping lots that will never make it into the shipment, to find the two that will.

What stays with me is not the build. It is the barista who could not steam milk in April and runs the whole bar in September – and the guest who takes the first sip, looks up, and asks what this is.

“I don't sell a concept and leave. I stand behind the bar with your team until the coffee is right – and then I come back to check.”

I started behind the machine, not behind a desk. Eighteen years later I still taste every lot myself, dial in every bar I build and train every team that runs it. I have opened coffee bars in hotels from the Swiss Alps to the Saudi desert, from London to Kyoto, and built four coffee brands along the way – and the part I care about most is the same everywhere: the minute a guest takes the first sip and looks up.

If you are planning a coffee bar, talk to me directly. You get one person who is responsible for the concept, the numbers, the machines and the people – not a chain of account managers.

FAQ

Good to know

Who do you work with?

Luxury and lifestyle hotels, resort groups and hotel chains that want their own coffee bar – and coffee companies building or expanding a brand across several locations.

Can we book single services?

Yes. Many clients start with the business case or the concept, others need only sourcing, capsule development or team training. The full turnkey program is available for new openings.

Where do you work?

Worldwide. Projects so far span more than 12 countries across Europe, the Middle East and Asia. Most work happens on site, supported remotely between visits.

How is a project priced?

After a first call we send a fixed proposal per phase, based on scope, number of outlets and location. The business case is usually the first deliverable.

Do you supply the coffee afterwards?

On request. Through our import and export network we can supply green or roasted coffee, including exclusive lots and private-label capsules.
